I started the week out with a little pumpkin carving!! Natalie and I carved our pumpkins on Tuesday. We did so good and had so much fun!
Friday night we had a costume party with our friends from school. I was dressing up as Jesse and Jesse was going to be a pack of Camel Cigarettes. He made his costume! It was a big hit at the party!
One of the guys brought his karoake machine. Which was a huge hit. We all sang and danced the night away. So much fun.
Saturday night we went to the haunted corn maze, so we thought. We ended up at the corn maze but the not the corn maze we wanted to be at. Which was completely okay with us girls because this one wasn't haunted, or so they told us. And, it was biggest one. We went for it. For some reason we decided to make it a race, girls vs guys. Oh us girls were ready to kick some butt. We had flashlights, a picture of the maze, and clues!! The guys didn't have anything!!
Once we walked out of that maze we hooted and jumped up and down!! We were getting real tired of walking in circles and the punk kids were driving us crazy. We thought for sure we had beat them. We didn't!! They had been waiting an hour and fifteen minutes for us!!!!! They said they did it in about 30 minutes!! But, they cheated!!!!! So, we actually beat them!! They were cutting across the corn and not staying on the path. And there was one point where you had to cross a bridge and they never even saw a bridge. Pretty sure that means the girls win!!!
Today Jesse and I went for a walk around the park at our apartment.

2 Down... 13 More to go
Two applications are going out today!! They are being sent to Minneapolis and Rochester Minnesota. Minneapolis is our #1 site... hope it makes it there safely!!!!
Last night Jesse is getting everything ready for the applications and our printer is going out. It leaves black marks down the edges of the paper. So, we took out the cartridge and cleaned it and cleaned the inside of the printer... still leaves the marks. He still had stuff to print and it did not look very professional. Good thing our neighbor Brandon was home and was so kind to let us use his printer!! Thank you Brandon!!!
We'll keep you posted!! Until next time...

New Meal... Balsamic Chicken with Pesto Gravy
Before I give you this awesome recipe, I thought I would give you an update. I have been super busy with work and Jesse has been super busy with internship stuff. He is sending out a few applications on Wednesday. That means he needs to finish and revise his essays, cover letters and vita. Then he needs to assemble all this and put his blessings on it and put in the mail!! I will try to post on Wednesday what sites and where these applications went. I don't want to distract him... he is working very hard on it right now!!!
A couple of us girls had to get out and let our husbands work on their applications so we went to the movies on Friday. We saw Flicka!! All I can say is bring your box of kleenex. Yes I mean box!!! I cried during the entire movie... it was so good!! All 3 of us were crying!! It was a very good movie!! Put it on your list.
I tried a new recipe tonight and it was awesome!! So awesome that I thought I would share it with you. Do you want to know the best part? It is quick and easy!!!

Balsamic Chicken with Pesto Gravy & Bitter Greens
2 Chicken Breasts
2 Tablespoons Balsamic Vinegar
2 Tablespoons extra-virgin olive oil (EVOO)
Salt and freshly ground black pepper
3 bunches arugula, thoroughly washed
Juice of 1/2 lemon
Parmigiano Regiano shavings
2 Tablespoons butter
1 Tablespoon all-purpose flour
1 1/2 cups chicken stock
1/3 cup heavy cream or half-and-half
1/4 cup homemade or store-bought pesto
Heat a large skillet over high heat with a little drizzle of EVOO. Place chicken breasts between two pieces of plastic wrap. Using the bottom of a heavy pot or small saute pan, give each chicken breast a good smack to make them even thinner. Peel back the top layer of plastic wrap and drizzle the balsamic vinegar over top and season with a little salt and pepper.
Transfer the chicken to the hot saute pan, seasoned-side down, and cook on each side for about 2 minutes.
While the chicken is cooking, combine the arugula, with the juice of half a lemon a drizzle of EVOO and a little bit of salt in a bowl. Remove chicken from the skillet and reserve on a plate while you make the sauce.
To the saute pan add butter and melt. Add flour and cook for about a minute or so. Whisk in chicken stock and cream and bring up to a simmer to thicken. Remove from heat and add the pesto to the skillet. Stir to combine. Divide the arugula onto individual plates, place one chicken breast on top of the arugual and pour pesto gravy over the chicken. With a peeler shave some Parmigiano over the greens, season with salt and pepper.
I have a few tips for you. So, I have no idea what arugula is... I assumed lettuce. In place of the arugula I used handfuls of lettuce. I also don't have Parmigiano Reggiano... I used just the Kraft brand Parmesan in the shaker (The kind you use for spaghetti or pizza).
I use store bought Pesto. And for my family members that only have one grocery store to shop at... you would find this by the specialty cheeses (blue cheese crumbles or by the salsa that must be Refrigerated.) Maybe by your produce?!!!? Gosh, I hope you can find it. Because this recipe is so worth it!! (I don't recommend buying the dry packet of pesto.)
Oh, and we had lots of the pesto gravy left over so I froze it for next time!!

Bridgetown Ministries
This morning after church there was a meeting for Bridgetown Ministries. Bridgetown Ministries is where a group of people go to downtown Portland and meet under the bridge and set-up different stations to "serve" the homeless. They have a foot washing station where they will wash the feet of the homeless and give them a fresh pair of socks. Hair washing station / hair cut, food and clothing. They said they can get anywhere from 100 - 300 homeless people that will show up.
Jesse and our friend Brandon did this a while back and did the foot washing station. I did not go with... I wasn't ready. There was no way you were going to get me to wash any feet!! I have a hard time touching my own feet! Washing hair - no way! I didn't think I could do it! Brandon and Jesse came back and told us what they did, they both enjoyed the experience. Of course they highly suggested that Natalie and I try this at least one time. We looked at each other with a worried look on our face... are you sure this is something for us?!!!?
Jesse and I decided to go to this meeting this morning after church. And let me tell you, it tore my heart open for these people!! Brain and Natasha are from our church and are trying to head a team up from our church to go down there twice a month. (They go every Friday night!!)
We got to hear a short story from one of the guys who Brain & Natasha met and helped him and his wife get married and get a job... and even a home of his own!!!
These stories just made me hurt for these people and why are they put in these situations. Afterwards Natasha had gave me a call... she seen my little nose turn red and wanted to know if I needed talk. I want to do this... but then I don't. What do I say to them? How do I act? Be yourself... but I don't think it is that easy! Anyway she shared with me some amazing stories....
Natasha saw this guy who is 6'2" dressed all in black, has a Mohawk and his street name is Dragon!! She went over to him and started to talk to him. After about the third Friday he finally opened up and they were able to talk for about 20 minutes. She said after a while she noticed him getting there earlier and staying later. One Friday night he didn't show up and she got real nervous because the last time she seen him he was depressed and she worried that he might try to take his life. She found out from some of the other people there that he was actually arrested for attempted murder. She asked around to see if anyone knew his real name, no one did. She was able to contact the jail and they gave her his real name and where he was located. She wrote him a letter asking him to put her on his visitor list. He did. Dragon is still in jail and has just found out that he might have a daughter in California that was born in January. The mother left and they can't find any family members. They are having a paternity test done and if Dragon is the father of this baby girl down in California, Natasha and Brain will take custody over her until Dragon gets out and on his feet and is able to support his daughter! Dragon had told them that they are better parents to him than his own. Natasha now calls him her 29 year old son!!
Natasha also told me about this girl she met who was 19. Natasha talked to her for a while and she said that her hair was just matted and she asked her if she could wash it for her. The girl said you can't even get a comb through it. Natasha took her over to the hair station and sat down on one side of her and the girl's boyfriend sat on the other and they sprayed so much detangler on her hair and combed and combed and combed. They got all the snarls out and Natasha washed her hair. She said the water was black! She washed and blow dried her hair. She said the girl was beautiful. She had this long strawberry-blonde hair. This girl stood in the empty parking lot and put her arms out and spun in a circle!! She felt like a million bucks!
So, I have come to the point where I want to do this. I can't say that I am ready to wash feet. But, I think I can serve food or even help someone pick out clothes! I am still scared out of mind to do this. Whenever we go to downtown Portland I am always right by Jesse's side because I am afraid of them. Natasha told me she felt the same way I did. And the first time she went down there she just observed and slowly she became more comfortable and realized they are just people! Brain has been doing this for a couple years and he said that it is completely safe! These people are very thankful for this ministry and truly benefit from it!
I think the first time we will go will be on November 10th! We will all meet at our church and prepare the food and get all the stations together. A big trailer will come up (they call it Night Strike) and we will load everything we will need that night into the trailer and car pool down to the bridge and set-up! I am real nervous yet real excited! I think it will be a great experience and a growing experience for me. I will be sure to post my experience when I go!!

An update
As I am sitting here waiting for Desperate Housewives to come on (and Jesse is playing playstation) I thought I would give you an update on our internship process. Some of Jesse's applications are due on the 1st of November. Today is October 1st.... that is a month away!! All of this is starting to sink in and become real!
Jesse's Dad is starting to look for a trailer to move us home with!! He is definitely ready for us to be a little bit closer!! We need a trailer big enough to pull our Jeep and all the things that we have collected over the past 4 years. And I do mean collect!! We now have 2 garages and a one bedroom apartment.... we started out with a 500 sq foot apartment!!!! Jesse has his father's blood when it comes to junk!! And I say junk as nice as I possibly can. When our garage neighbor, Greg, was moving he was giving 1/2 his stuff to Jesse. "Hey Jesse do you need this 2 x 4?" Of course he can't even turn down a piece of wood... You never know when you might need it!! So you can imagine the stuff we have!!
Anyway, back on track. All this moving talk and internship stuff finally sunk in last Sunday. We only have about 10 months left out here. I was vacuuming the floors today thinking that our lease is up the end for March (and I get a free carpet cleaning!!!) but we won't be able to sign on for another year! We can't even do a 6-month! We will have to rent month to month!! This is all very exciting yet very stressful!! I don't remember it being this stressful when we moved out here! Maybe because I just finished college we just got married and came back from our honeymoon... things didn't have time to sink in!
I have to remember that there is no need to worry, God already has a place in mind for us and it is getting it ready!! I just hope it is in either Minnesota or Wisconsin!!
That is all I have to say right now about the process! Just pray for us for patience as we wait to find out where we will be going next! God bless!
