Internship Update

It is time for an update. First lets take a deep breath.... it has been a busy/stressful couple of weeks.

Both of us are recovering from a case of undetected strep throat. I got it about 2 weeks ago and went to to the Dr. to be tested. Both my tests came back negative and I was told to drink fluids and take Advil. A week later Jesse had the same symptoms and I was still not better, almost getting worse. We went back to the Dr. last weekend and we were given medicine. Which, I think might finally be working!

How about an internship/moving update...

On match day when the Wisconsin Dept. of Corrections called us to offer us Green Bay, Milwaukee, or Madison - and we went with Green Bay. We really were saying that we wanted the Fox River Valley which consists of 4 sites.

The locations are: Green Bay, Appleton, Oshkosh, and Fond du Lac.

Jesse needs to be active in at least 2 locations [they call them rotations]. One of the sites has to be an all womens prison in Fond du Lac. He doesn't want this to be his main site which means he would need to commute there about once a week.

Green Bay is 70 miles from Fond du Lac; Appleton is about 30 miles; and Oshkosh is about 20 miles. (I think my mile estimates are correct - I can't remember exactly what it is.)

We picked Oshkosh! Now we are moving to Oshkosh! Everything about the site stays the same, just his location changes.

Lunch and Learn

Jesse had an early birthday surprise for me today. He wouldn't tell me what it was until we arrived... all I knew was to dress nice and to be ready by 11:15am.

He took me to Caprial's Bistro where we sat in on a cooking show with John and Caprial!!!!

If I am home on a Saturday afternoon at 2:30 - I watch these guys!! When I found out they lived here in Portland, had a restaurant, and did cooking shows - I just had to go!! I had been hinting about it for over a year that I really wanted to go... and I got to go!!

It was so cool!!!! Can I just say that the camera really does add 10 pounds!!!!! They were so tiny!! I looked at John and thought "You should really eat more." I felt like I was with celebrities!! Okay, Oregon celebrities!!

We arrived at Caprial's Bistro and were taken to a back room which was too small to fit 20 people in - but we squished together. We sat at long tables and faced a counter top where John and Caprial would be. They had a stove, small counter space w/ cutting board, and a small sink. They had two video cameras hooked up to TVs - one over the stove the other over the cutting board. This way we could see what they were doing... we were in the back row.

Here was our Menu:

Watercress Salad with Warm Bacon Dressing - YUM!!! This has to be the best salad, EVER!!! They make their own bacon at the bistro - yeah, it was the best ever!!

Braised Leg of Lamb w/ Artichokes and Fresh Herbs - SO GOOD!! This was my very first time with lamb - but it was so good! It was cut into pieces with this sauce and with the artichokes - YUM!!

Pan-friend Polenta - Very good! This was placed on your plate w/ the lamb-artichoke mixture over top! AWESOME!!

Orange Pound Cake w/ Dried Cherry Compote and Fudge Sauce - Never had better!! She forgot the orange - but I didn't care! This was so good!! The pound cake was still warm when she served it and with the homemade fudge sauce - you can't go wrong! I just wanted to walk up there and lick her mixing spoon!!! Heck, just give me the whole bowl!!!

We watched them make everything and then we were able to eat everything they made. Like I said before everything was so good!! I would totally recommend it and would love to go again!!

Well, if we have to spring ahead tonight - I better get to bed. Jesse is at the casino tonight with the guys... wish him luck!!

Happy Daylight Savings!!! I love longer nights!! Enjoy them!!

Spring Has Sprung

I am starting to learn that I need to appreciate an Oregon Winter. Next winter you will hear me complaining about snow and it being in the negatives. I will be requesting heated seats and begging for an electric start for me car!!

The past two days have been SO nice here in Oregon! We have been in the 60s both days and have had full sunshine!!!

Today we were in the mid-60s and I just had to bust out the sandals!! You don't get to wear sandals until July in Wisconsin...



The trees are even starting to bloom!! I even noticed a few Easter flowers on my way home from work today! (I can't remember their name... they are yellow and look a bit like tulips.)





The sunshine doesn't last long... we are in for rain and more clouds the rest of the week!! I enjoyed it while it lasted.
