An update
As I am sitting here waiting for Desperate Housewives to come on (and Jesse is playing playstation) I thought I would give you an update on our internship process. Some of Jesse's applications are due on the 1st of November. Today is October 1st.... that is a month away!! All of this is starting to sink in and become real!
Jesse's Dad is starting to look for a trailer to move us home with!! He is definitely ready for us to be a little bit closer!! We need a trailer big enough to pull our Jeep and all the things that we have collected over the past 4 years. And I do mean collect!! We now have 2 garages and a one bedroom apartment.... we started out with a 500 sq foot apartment!!!! Jesse has his father's blood when it comes to junk!! And I say junk as nice as I possibly can. When our garage neighbor, Greg, was moving he was giving 1/2 his stuff to Jesse. "Hey Jesse do you need this 2 x 4?" Of course he can't even turn down a piece of wood... You never know when you might need it!! So you can imagine the stuff we have!!
Anyway, back on track. All this moving talk and internship stuff finally sunk in last Sunday. We only have about 10 months left out here. I was vacuuming the floors today thinking that our lease is up the end for March (and I get a free carpet cleaning!!!) but we won't be able to sign on for another year! We can't even do a 6-month! We will have to rent month to month!! This is all very exciting yet very stressful!! I don't remember it being this stressful when we moved out here! Maybe because I just finished college we just got married and came back from our honeymoon... things didn't have time to sink in!
I have to remember that there is no need to worry, God already has a place in mind for us and it is getting it ready!! I just hope it is in either Minnesota or Wisconsin!!
That is all I have to say right now about the process! Just pray for us for patience as we wait to find out where we will be going next! God bless!

The Queen of Salsa
Okay, okay, okay Ben may be the King of Salsa.... but I am the Queen!! I just made the best salsa!! I got the recipe from Rachael Ray here it is. (You'll never eat store bought salsa again!)
Fresh Tomato Salsa:
3 medium tomatoes, roughly chopped
1/2 to 1 jalapeno, stemmed and minced with seeds (I do w/out seeds)
1/2 medium red onion, grated (I do finely chopped)
1 teaspoon kosher salt
1 clove garlic, peeled
2 tablespoons extra-virgin olive oil
1/4 cup chopped fresh cilantro, leaves and stems
Toss the tomatoes with the jalapeno, onion, and the 1/2 teaspoon salt. Smash the garlic clove, sprinkle with the remaining salt, and with the flat side of a large knife, mash and smear the mixture to a coarse paste. Stir the paste into the salsa with the olive oil and 1/4 cup of cilantro.
And if you are feeling really sassy...
Season a couple chicken breasts with chili powder and salt and fry in a pan with EVOO and when finished top with your salsa! Oh so good!!
I have found a new specialty of mine. I love to cook!! I'll post more good recipes when I find them. I can't wait to hear what you think!!
